1 of 52 - Food for thought

Something I did some years ago, inspired by a blog - sadly now long gone, was to try a new recipe each week with the idea that by the end of the year I would have a collection of 52 new meals/bakes or flops for me to return to (or avoid!).

Admittedly I did not manage all 52 weeks but by the end of the year, I did have a considerably revamped meal plan of which a number of recipes remain favourites and are still part of the menu.

However, I get bored with cooking - it is something I do so that we can eat, not something I do because I am good at it or actually enjoy doing. 

We eat to live rather than live to eat

Any hoo - I decided I would give this another go.  Himself has decided that as a moderate omnivore living with a full time vegetarian (me)  that he might as well fully commit to being vegetarian too. This gave me added incentive to look for new recipes and I found THIS 

The 'Ultimate VEGAN Breakfast' - no don't look away and tut tut, vegan food can be surprisingly 'normal' and not at all artsy or complicated. My only concession to the ingredients was to swap out the baked beans (something I just can...not...eat...) for cannelloni beans and added sliced bell pepper and cherry tomatoes. It makes a flavoursome and satisfying meal and seeing that our token raving carnivore (my youngest son) scoffed it in record time then asked for the recipe to be sent to his equally raving carnivore lovely gf, confirms my initial statement - vegan food can be surprisingly 'normal'.

    1. We use and enjoy the Quorn sausages (8 in a pack) however that is here in the UK, not sure where you are based. Quorn do a good selection of 'meatless-meat'and have a good website https://www.quorn.co.uk/ hope that helps :)

  2. I'll enjoy this adventure with you and although we do eat meat, I'm not a big meat eater, so it will be interesting seeing what you come up with to please both tastes. I know I've seen a couple of recipes as I flip through some old folders lately which I might share with you. If......I can remember where they are(lol). Take care & hugs from down under.

  3. We had the Linda McCartney ones last night. I do something called a Cowboy Bake which always disappears fast. I'm not that keen on cooking, but am trying to make a few new things so made my first ever Mulligatawny soup for supper today. Thankfully it's all gone with no complaints. Arilx

    1. We used to get the Linda McCartney veggie burgers as the boys absolutely loved them, then they did a "new and improved" recipe thi g to them and they were never as good. But the sausages are yum

  4. Phwoar!! That looks absolutely scrummy and I'd be happy to have it for lunch or supper, not just breakfast.

    Re Carol's sausage question, may I chip in? The frozen Quorn ones are not bad, but my absolute BESTEST are fresh ones from Cauldron. My confirmed carnivore has tried them and agrees they are "pretty damn acceptable', which is the highest praise he is ever likely to bestow.

    Morrisons have a range called "Taste" and their frozen sausages are good, as is the mince, but it's soya based which I avoid where possible. The Cauldron ones are based on a mycoprotein.

    1. I agree re the Cauldron sausages but we can't always get them and our nearest Morrisons are not that near!! But yes the Cauldron are nom nom nom😁

    2. I buy lots when I see them, they freeze extremely well.
      Prefer to defrost before cooking, but in an emergency they will cook from frozen.

    1. We did that last November. We decided we needed to eat to the back of the cupboard, making us use up all those things you buy coz you think it's a good idea at the time, then never use them😁

  8. That looks delicious. I must say we enjoyed the Vegi sausages from Aldi that you recommended. Had tried some a few years ago when Dnj were here and found them tasteless but these reminded me of good old Vienna sausages. Enjoy your weekly new dishes. I'm sure that family will.πŸ’“ xx
